It’s a really hot and sunny afternoon. I felt the heat flow from the glass windows. We were so lucky to be at home. But my baby didn’t agree with me, he wanted to go out. It’s been 3 days I didn’t take him outside. He kept asking and pulling me to the door and tried to get out. I knew in this heat, if we went out of the house he would get sick. And I had a lot of stuffs at home piling up that needed to be taking care of before diner.
I decided I had to do something to keep him busy and happy.
I offered a fresh carrot stick for him to munch on while I grasped a few ingredients from the cabin to make some snack for a small picnic just for us. I heated the pan and fried a handful of nuts like cashew nut, almond and peanuts followed by a handful of dried fruits like dates and raisin. I added about a cup of water and seasoned with a little salt. When it was furiously boiling, I quickly added half a cup of couscous, and stirred quickly. Then I turned off the heat and kept it covered for 2 minutes. I asked him for a few pieces of carrot for decoration and he gave me. To accompany our nutty couscous I made a cool bottle of chocolate milk with a lot of ice.
A quick recipe for dried fruits & nuts couscous:
1/2 cup couscous
1 cup water
1/2 tsp salt or to taste
A handful of dried fruits (Raisin, dates, etc.)
A handful of nuts (Cashew, almond, peanut)
1 tbsp Oil
Heat oil in the pan and fry nuts first until they are lightly toasted, add dried fruits and fried until they are popped. Add water and salt and bring to boil. Add couscous and stir quickly. Turn off the heat and keep it cover for few minutes until the couscous cook thoroughly. Garnish with chopped parsley.
I had a perfect spot for our picnic. It’s not going to make us sick like outside parks where we couldn’t tolerate the heat at this time of the day. I put a mat in the small balcony garden outside the kitchen where Yaseen always sneaked out to make a mess. It’s a small spot where we grew organic herbs and vegetables in the pots. We just sat there and enjoyed our couscous and icy chocolate milk. When he started playing with something else, I moved to work on my laptop with my eyes on him time-to-time.
By the time I’ve finished my work he’s done enough work himself in gardening. After his long hard day, he takes a bath, and sleep at this very moment.
