11.6.2010 World Cup Snacks

I am not a football fan but my husband and sister are. Actually my whole family in Thailand is crazy about football that even the bath towels are Liverpool merchandise. I support the World Cup mania because it provides the great family time. Somehow this game brings my family together and closer. My sister is setting up a video conference call to Thailand so that we can watch and discuss the game with our family… it is so crazy! I’ve been offered if I cater them with delicious snacks during the games, the whole house will be sparkling clean and I don’t have to worry about doing the dishes.

So what’s on the menu tonight?

• Homemade Corn chip with fresh salsa

• Roasted organic groundnut

• Chocolate pudding

• Ice coffee smoothie and ice chocolate smoothie for Yaseen.

Home made corn chip (4 servings)

2 cups corn meal

1 cup all purpose flour

2 tsp baking powder

1 tsp salt

Warm water- enough to form the dough

Oil for frying

Mix corn meal, flour, baking powder and salt together.
Slowly add warm water and bring the ingredients together by hand to form the firm dough.
Knead for 20 minutes, cover with cling film and keep in refrigerator for at lease 30 minutes.
Take a little portion of the dough at the time to roll out to a thin circle sheet, dust the surface with flour if needed.
Cut the sheet into 4 part equal parts. Repeat the process until all dough is used.
Deep fried the cut dough in the skillet over the medium heat until the chip turns golden brown.
Drain access oil in paper towel.

Salsa

2 onions- chopped

4 Tomato- deseeded & chopped

2 tbsp sugar

1 1/2 tsp salt or to taste

3/4 cup ketchup

4 cloves garlic

1 lime- juiced

A handful of coriander leaves- chopped

2 tbsp oil

Heat the pan over the medium heat.
Add oil and sauté onion until soft.
Add garlic and stir for 1 minute.
Add tomato and fry for 1 minute only.
Add sugar, salt and ketchup, and stir for another 1 minute. T
urn off the heat, add lime juice and coriander leaves, and mix well.

For other roasted groundnut, I pan roast organic groundnuts until they crack a little and turn lightly brown, then spring some salt on them. Let them cool down and they are ready to serve.

For chocolate pudding, my sister handles Nigella Lawson easy chocolate pudding herself.

And for coffee smoothie, I add 2 cups of ice chip in the blender with 3 tbsp of coffee, a cup of milk and 5 tbsp of sweeten condensed milk and blend until smooth. We use chocolate sauce instead of coffee for Yaseen to make a delicious chocolates smoothie.

I know these sound a lot and too much calories, but hey!… it’s only for a month and we promise to go joking every morning.
