Sadik sent me a message from his office yesterday to see if I took photo of his lunch box. It was so good, so he wanted me to share this recipe on our blog.
Yes, it was really good and very quick to make. It wasn’t to hot and spicy but perfectly blend of heat, sweetness and saltiness.
Stir Fried Fish with Ginger and Dried Chili
Ingredients: (2 servings)
250 gm fish fillets- sliced into small bite size
1/4 cup flour
1/4 tsp salt
1/4 ground white pepper
2 tbsp chopped ginger
5 cloves garlic- minced
2 dried red chili- roughly bruised
1 tbsp soy sauce
2 tsp oyster sauce
1 tsp sugar
1 tsp fish sauce
1/4 chicken stock or water
1 spring onion- chopped
Oil for deep fried and stir fried
Combine flour, salt and ground white pepper in a mixing bowl, then slow add water to create a thick consistency paste.
Add sliced fish and mix well so the batter coated fish.
Heat the oil in the pan over the medium heat for deep fry.
Drop the fish piece by piece and fry until golden brown.
Remove from the oil and drain in kitchen towel.
Heat another wok or large pan over the medium- high heat and add oil.
Add garlic, ginger and dried chili and stir for 1 minutes or until fragrance.
Add soy sauce, oyster sauce, sugar and fish sauce. Stir for a few minutes.
Add 1/4 cup chicken stock or water and stir in high heat for 1 minute.
Check the seasoning and add deep fried fish, then mix well.
Throw in some chopped spring onion and give it the last quick stir.
Serve immediately over hot rice or noodle.
