Thai Style Corn Fritters with Sweet Cucumber Salad

When we went on the trip to the lake last Sunday, we got a good bargain of fresh sweet corn from the local. We knew immediately what we were going to go with them. They were really fresh and sweet. One perfect recipe we love is Thai style Corn Fritters serve with chili sauce and sweet cucumber salad. I learned this recipe from cookery class in high school. It was so easy and delicious that I made it whenever we had guests visit at our home. It is very addictive so make sure you can control yourselves, people!

Thai Style Corn Fritters

Ingredients: (Serving 6)

4 Fresh corn- cut out the kernels and reserved

2 tbsp Thai red curry paste

1/2 cup flour

3 tbsp corn flour

1 large egg

1 tsp salt

2 tbsp oyster sauce

1 tsp white pepper- ground

4 coriander roots- crushed to paste

4 cloves garlic- crushed to paste

Oil for frying

In the original recipe, we were asked to use mortar to grind garlic, coriander roots and white pepper together. Please do if you have the equipment. I just mince garlic, coriander roots finely and crush white pepper roughly with knife. We were also suggested to bruise the corn kernels in the mortar. But these days, I prefer the magic of food processor.

Put corn kernels in the food processor and blend for 5-10 second ONLY to just break them. Let some part smooth, some part still intact.

Add all other ingredients except oil and combine them together to from a thick paste. If it is so runny, add more flour. 

Heat the oil in the deep bottom pan over the medium flame; use your hand to slowly drop about 2 tbsp of batter in each time. Fry the cutlet until crispy and golden brown.

Sweet Cucumber Salad

Ingredients:

2 cucumbers- peeled and sliced

5 shallots- sliced

1-2 red chilis sliced

3 tbsp vinegar

3 tbsp sugar

2 tbsp water

1 tsp salt

Mix cucumber, shallots and chili in the mixing bowl.

Combine sugar, vinegar, salt and water and bring to boil for 1 minute. Keep aside and allow cooling down.

Pour the sweet and sour liquid to the salad mixture and mix well.

Leave for few minutes for the flavour to set before serve.

Though these are appetizer, but we do love them as breakfast, too.
