One of my favourite Thai dishes is fish in red curry sauce. Every bite of it makes me think of my mom and her rustic kitchen. I don’t know where to begin to describe how yummy this dish is. It is very balance and flavourful. The aroma of herbs is wonderful and fresh. The crispy fish with creamy curry sauce works wonderful over hot rice. My son has already felt in love with yummy dish. It’s simply the recipe we love.
Mackerel in Red Curry Sauce
Ingredients: (4 servings)
500 gm Mackerel- cleaned and washed
2 tbsp Thai red curry paste
1 1/2 cup coconut cream
1 tsp sugar
1 tsp fish sauce or to taste
5-6 kaffir lime leaves
A handful of sliced wild ginger- optional
Oil for deep fry
Heat another pan over the medium heat and one cup of coconut cream. Bring to boil and stir until the oil rise to the surface.
Add red curry paste and stir in coconut cream and cook until the oil separate again.
Add wild ginger and kaffir leaves.
Add sugar and half a cup of water, and then bring to boil.
Add the rest of coconut cream and cook further for few minutes.
Add fish sauce and check the seasoning. The sauce should be thick and creamy.
Throw deep fried fish in and gently toss until the sauce coated the fish.
Serve hot with cooked rice.
