I love easy and quick stir fried dishes. Frankly wok and soy sauce are my best friends. I can finish yummy lunch less than 15 minutes with simple ingredients. I also love stir frying because it keeps food fresh, crunchy and not really cause the loss of nutrition in food that much.
We’ve just got some fresh organic capsicums or green bell peppers from the store yesterday. I instantly thought of stir fry them with chicken and serve with some steamy hot rice.
Stir Fried Chicken with Capsicum
Ingredients: (4 servings)
300 gm boneless chicken- sliced
1 large capsicum- sliced into medium pieces
4 cloves garlic- minced
1/2 onion- sliced
2 tsp soy sauce
1 tbsp oyster sauce
1/4 tsp sugar
Few fresh basil
1 tbsp oil
Heat oil in the large pan or a wok over the medium-high heat.
Add garlic and sauté until golden brown.
Add chicken and stir for few minute.
Add soy sauce, oyster sauce and sugar.
Add ½ cup of water and cook further for few minutes or until chicken is well done.
Add onion and capsicum and cook further for 1 minute only to keep the capsicum lightly crunchy.
Throw some fresh basil in.
Check the seasoning and remove from the heat and serve hot with some hot rice.
The stir fry was perfect and yummy. Yaseen couldn’t wait to dig in when it was in the wok itself. I hope your family like this simple recipe, too.
