Homemade Tortilla Chip with Minty Cucumber Salsa

Having an energetic baby in my home, I am required to make snacks every afternoon. Yaseen is not only picky but very demanding. He always knows exactly what he wants. He loves jelly and cheese sandwiches, chicken burger with creamy mayonnaise, homemade pasta with meatballs, chocolate pudding, ice- cream in crispy cone, etc.

Today he wants something simple, homemade tortilla chips!

It’s cold and about to rain in any minutes so we agree… tortilla chip it is! Hot hot homemade tortilla chip!

Homemade Tortilla Chip

Ingredients: (4 servings)

1 1/2 cup flour

3 tbsp corn flour

1 tsp baking powder

1/2 salt

1/4 cup vegetable oil (I used sunflower seed oil)

1/3 cup lukewarm water

Oil for deep fry

How I do it:

Combine flour, corn flour, baking powder and salt in the large mixing bowl and mix well.

Add 1/4 cup of oil and stir.

Gradually add lukewarm water and knead until the dough is firm and pliable.

Cover the dough with damp cloth for 30 minutes.

When the dough is ready divide the dough into lemon size balls.

Rolls them out into thin circle sheets.

Cut into bite sizes with kitchen scissor or knife.

Heat the oil in the pan over the medium heat.

Deep fry these thinly cut dough for few minutes or until golden brown.

To go with this hot and crispy tortilla chip we made some simple fresh cucumber salsa with fresh mint. This salsa is fresh and crunchy. It is slightly spicy and tangy…. Very yummy!

Minty Cucumber salsa

Ingredients:

1 cucumber- diced

1 large tomato- diced

1/2 onion-diced

1 lime- juiced

1/2 tsp chili powder

A pinch of salt

1/2 cup ketchup

A handful of mint- finely sliced

How I do it:

Combine all the ingredients together and check the seasoning. 

Our homemade tortilla chips and minty cucumber salsa combo is a blast. Yaseen just loves them and they disappear really quickly into his tiny stomach.

I don’t know what he’s gonna want to eat next but I love the challenges 🙂
