Sweet Corn Pie

7-11 helped feeding me when I was a kid going to school. They were like moutains of ready to eat food in these small stores. My favourite thing ever was sweet corn pie. It was hot and the filling melted out to burn your tongue at first bite. I haven’t had something like that in a while, so last weekend I got up early trying to recreate these comforting treats.

Corn pie is so simple to make and it’s definitely gonna be something everybody love. The pie is crispy with sweet and creamy filling. It is so so good! 

Sweet corn Pie

Ingredients: (make about 16-20 pie bars)

For pastry:

2 1/2 cup flour

250 gm butter- cut into small cubes

1/2 tsp salt

1/4-1/2 cup chilled water

Sift flour and salt together into a large bowl.

Add butter cubes and rub them with your fingers into the flour to resemble coarse cornmeal.

Gradually add chilled water and combine and gather the mixture into a ball.

Wrap in the cling film and refrigerate for 30 minutes.

For Filling:

2 cup fresh corn kernels

1/2 cup milk

50 gm butter

3/4 cup sugar

1/2 tsp salt

2 tbsp corn flour- dissolved in 2-3 tbsp milk

Combine corn kernels, milk, sugar, salt and butter in the medium pot.

Bring to boil and simmer for 10 minutes or until the corn is cooked.

Add corn flour paste and stir for few minutes to create a rich thick filling.

Remove from the stove and leave to cool down.

Make the pies:

Divide the dough into 16-20 equal parts.

Roll each part into 4×5 inches rectangular sheet.

Spoon about 2 tbsp of filling in the center of the first half of the sheet.

Fold the pastry into half and seal the edge with the fork.

This process will give an adorable 4×2 yummy pie bar.

Repeat the process until all dough and filling are used.

Preheat the oven at 350 degree F.

Brush these pies with beaten egg.

Bake for 15-20 minutes or until golden brown.

While baking if you notice some filling leaking out, don’t worry. They will be sealed while cooling down.

 Yaseen woke up when the pie was still in the oven. He begged for them “ Pie! Pie! Pie!” like a thousand times. He sat there and waited for me to take them out. He dove in fast with the risk of burning his tongue and he smiled. They were perfect!

We packed some of these delicious things for our landlord who invited us for brunch and the aunty said it’s delicious 🙂
