For My Love of Veggies: Stir Fried Mushroom with Tofu

It’s been a crazy week for us with helping my sister shopping and arranging her traveling. Now that she is not here, I have to come up with better system to help me keeps up with all the works and households. We’ve been pushing the new post on “For My Love of Veggies” for a week, so today we want to share another simple vegetarian stir fry everyone really love.

Mushroom and Tofu is a wonderful combination. They have contrast of texture and their flavours get along so well. Tofu is a wonderful source of protein, and mushroom is packed with minerals and fiber. So this dish is not only delicious but very healthy, too.

Stir Fried Mushroom with Tofu

Ingredients: (4 servings)

100 gm button mushroom- sliced

100 gm firm tofu- sliced

Few cloves garlic- roughly bruised

Few fresh corianders- chopped

1/4 tsp salt

1/4 tsp sugar

1/2 tsp ground pepper

1 tbsp soy sauce

1/2 cup rich vegetable stock

2 tsp oil

How to cook:

Heat oil over the medium heat in the large pan.

Add garlic and sauté until light brown.

Add tofu and toss around until crispy brown.

Add mushroom, salt, sugar, pepper and stir for few minutes.

Add vegetable stock and simmer for few minutes.

Throw in some coriander and give it a last quick stir.

Serve hot with rice or noodle.

It is light and nutritious, but very well balance and flavourful. This yummy stir fry is really incredible with a bowl of hot rice.
