After my sister went home to Thailand, things needed to be simple. We got used to with being helped and cleaned after, now we really need to do everything ourselves. One of the good things happen when she is not around is my husband become more helpful and active in the household. He becomes more attentive and keen to spend more family time.
Last weekend he cooked!
It was really simple but delicious. He made a rustic prawn with black pepper and capsicum which Yaseen and I really enjoyed. The prawn was fresh and soaked up the heat of this bell pepper really well. I cooked butter and pea rice to go with his delicious prawn.
Prawn with Capsicum
Ingredients: (servings: 2 adult + 1 baby)
300 gm Prawn- peeled and deveined
1 tbsp minced garlic
1 tbsp minced ginger
1 large onion- sliced
2 tomato- pureed
1 capsicum- sliced
1 tsp salt or to taste
1 tsp pepper
1 tbsp oil
How to cook:
Heat the oil in the pan over the medium heat.
Add garlic and ginger and stir for 1 minute.
Add onion and fry until translucent.
Add capsicum and give a quick stir.
Season with some salt and pepper.
Add tomato puree and stir for few minutes or until the tomato is cooked.
Add about 1 cup of chicken stock or water and bring to boil.
Add prawns and cook for 3-5 minutes or until the prawns turn pink and curl up.
Check for seasoning and serve hot over some rice or flat breads.
