What could be more simple and comforting like a bowl of noodle in this warm afternoon? Today after serving Nutella with slices of bread for breakfast, I decided to make something hot and intense for lunch. Yaseen is looking forward to slurping the long threads of sticky and tender rice noodle.
The glossy rice noodle flavoured with soy sauce, oyster sauce and sugar is so balance and yummy. It’s my quick mother and son easy and quick recipe. Yaseen love cracking the fresh eggs in the hot pan and let it sizzle away while I am throwing everything else in and work on the magic.
Stir Fried Rice Noodle with Egg
Ingredients: (2 servings)
2 cup cooked rice noodle (follow the package instruction)
2 large eggs
3 cloves garlic- minced
2 dried red chili- broken
1 tsp soy sauce
2 tsp oyster sauce
1/2 tsp sugar
Salt and pepper to taste
1 tbsp oil
How to cook:
Heat the oil over the medium-high heat.
Add garlic and dried chili, stir fry until garlic turned golden brown and the chili lightly burned.
Crack in the eggs and lightly scramble into pieces.
Add cooked rice noodle, soy sauce, oyster sauce, sugar, salt and pepper.
Toss the noodle for few minutes until the seasoning coated every single noodle.
Check the seasoning and serve hot.
This same technique I use for vegetarian stir fried noodle. I simply omit the eggs and add my favourite veggies like broccoli, cabbage, green beans, etc. I won’t use oyster sauce but will add about a tbsp of light soy sauce extra.
