Pumpkin Bhaji

Pumpkin is one of the regular vegetable we use. Its natural sweetness and tender texture are amazing for creating many delicious dishes. Like all other colorful vegetables, pumpkin is packed with vitamin, minerals and fibers. When Yaseen was smaller, he loved mashed pumpkin for breakfast. But the simple mashed pumpkin won’t do it now, as his palette grows, the intense and flavourful dish is what he wants.

Spiced pumpkin or pumpkin bhaji is the simple, healthy and nutritious dish. This spicy & sweet golden dish is a perfect spread for warm toasts or homemade flatbreads.

Pumpkin Bhaji

Ingredients: (2 servings)

400 gm pumpkin- peeled and cut into big chuck

1 tsp mustard seed

1/2 onion- chopped

1 tomato- diced

4 cloves garlic- minced

1 tsp minced ginger

2 tsp garam masala powder (available in Indian Grocer)

3/4 tsp salt or to taste

Lime wedges

Chopped fresh coriander leaves

1 tbsp oil

How to cook:

Cook pumpkin in the pot with enough water and a pinch of salt until cooked and soften. Drain and keep aside.

Heat oil in the pan over the medium heat.

When the oil is hot, add mustard seed and let it splatter for few second.

Add onion and stir until translucent.

Add garlic and ginger and stir until fragranced.

Add tomato and stir for a minute or until soften.

Add garam masala powder and stir for another minutes.

Add cooked pumpkin and salt, stir and mash with the wooden spoon until coarsely mashed.

Squeeze some lime and sprinkle some chopped coriander on top and serve with some hot flatbreads.

The dish turned out to be not only vibrant but also full of flavours. It was light but comforting and warm. It made our simple lunch richer and healthier.
