It was really warm in the afternoon yesterday. We have the urge of baking something to make the house feel and smell welcoming. I made 2 cups of hot chocolate and started working on my laptop. Yaseen was watching cartoons and played with his toys. We took a little break to mix some cookies dough. Peanut butter cookies was on our mind. Soon before our hot drink dried out, we finished making the cookies dough and rested it in the fridge.
Peanut butter cookie is one of our favourite cookies. Making cookies is actually really simple and quick. One thing I always wonder about peanut butter cookies recipe is why do we need to use 2 kind of sugar- white and brown? Why not whole white or whole brown? Anyway, in this recipe I only used white sugar and the cookies turned out to be perfect and delicious. The feeling of pulling out the hot tray of warm cookies is always so much better than opening from the packages. This season makes us feel even more in love with our oven 🙂
The reason I love mixing the cookies dough, batter, or even marinated meat in the Tupperware is because it is easy to store the leftover in refrigerator right away. This morning I pulled out the leftover cookies dough from yesterday afternoon from the fridge. It was like a thick, rich and creamy ice-cream. We couldn’t resist baking some in the morning.
I preheated the oven and scooped the dough in the baking tray, then lightly pressed it down with fork.
The cookies went in the oven for 15 minutes, and we could sense the delicious smell developed in the air minute by minute. My house smells like a cozy mini bakery.
Peanut Butter Cookies
Ingredients: (make about 40 cookies)
1 1/2 cup flour
1 tsp baking soda
1 cup smooth peanut butter
75 gm butter- cut into tiny cubes
1 1/4 cup white sugar
How to make:
Whisk butter and sugar until coarsely combined.
Add eggs and beat well.
Add peanut butter and mix well.
Sift in flour and baking soda. Gently stir until the ingredients formed sticky dough.
Refrigerate for 1 hour.
Preheat the oven at 180 degree C.
Scoop the dough in the greased baking tray and press it down with fork.
Bake for 12-15 minutes or until golden brown.
Our cookies were crunchy and delicious. Everyone bit these delicious cookies before their breakfast. We saved some for munching during the day. This afternoon, we are baking again…not sure between peppermint brownies or vegetable tart…or maybe both. 🙂
