Yaseen seriously fell on the ground when he was trying to race with his dad in the morning walk. He injured himself badly on this right arm, but very soon he just forgot about it completely. I felt sorry for him and I wanted to make his favorite breakfast.
I knew Egg Burgee (Indian Spicy Scramble Egg) would cheer him up. But it was such a rush in the morning so I did a short cut version and the result was more than amazing.
Spiced Scramble Egg Sandwich
Ingredients: (2-3 servings)
4 large eggs- beaten
4 spring onion- chopped
3/4 tsp garam masala (Indian Spices Mix)
Salt to taste
8 slices bread
Butter for greasing + 1 tbsp for scramble egg
How to cook:
Heat 1 tbsp butter in the pan over the medium heat.
Add spring onion and sauté until soft.
Add garam masala and stir for few second.
Add eggs and salt to taste.
Stir continuously until the egg is cooked.
Stuffed spiced scramble egg between 2 pieces of bread. Make 4 sandwiches.
Grill them in the preheated and greased sandwich maker.
Serve hot with ketchup and honey.
The sandwich was so fresh and light. It was perfect for the busy morning. It wasn’t spicy but very aromatic. Yaseen loved dipping them in honey mix with ketchup.
