I can’t believe I haven’t shared this simplest recipe that can be quickly fixed in 5 minutes. As rice is a stable food in our household, few cups of leftover usually pop up a few times a week. There is no other best way to handle this like cradling those fine grains in the sizzling wok.
Something about fried rice that settles its position on our table permanently. It is not just about quick and easy. Every stir moves the simple ingredients, synchronies the rhythms and flavours into the savoured composition. The smoky heat exhales from the wok also carries the odors of taste that we don’t even have to put in our mouth to try it.
Cooking fried rice needs no measurement and procedure. You do what you like and allow it to develop the taste that you love. Cooking fried rice is a freestyle art. Things you want are swept and unified into the hot wok.
One of our favourite fried rice is egg fired rice with the secret ingredient, turkey bacon. The smoking oil scorches and burns off the thin fat make it very crispy and munchy. It is very joyful watching the fainted mist evades from the bowls as the mouthfuls of comfort slowly vanish inside our mouths.
Egg Fried Rice with Turkey Bacon
Ingredients (4 servings)
3 1/2 cup of rice
1/2 cup diced turkey bacon
2 eggs- slightly beaten
2 garlic- finely minced
1 1/2 tbsp soy sauce
1/4 tsp salt or to taste
1/2 tsp ground white pepper
2 tbsp chopped spring onion
1 1/2 tbsp oil
- Heat oil in the pan over the medium-high heat and sauté garlic until golden brown.
- Add turkey bacon and stir for few minutes or until cooked and crispy.
- With wooden spoon, swipe the bacon to one corner of the pan, add eggs and slightly scramble to get the small pieces.
- Add rice, soy sauce, sugar, salt and white pepper. Stir fry for 2 minutes or until mixed well.
- Add spring onion and give it a quick stir. Remove from the heat and serve hot.
Fried rice is truly a comfort food for everyone in my home. We did sometimes cook off steamy fried rice after midnight when our stomach growled between the commercials of late night horror movie.
