We haven’t had squid in a while, since rain has started and the fishing regulation has been strict over the spawning season. Seafood became expensive and deficient in the market. When we spotted the freshest squids on the ice tray over the weekend, we immediately went for it.
I wanted something simple that doesn’t overpowering the freshness of squids. Simple stir fry is always my number one choice when it comes to squid. I loved that sea water tasted in that chewy texture of squid that I tried to retain the most of ocean flavour in the dish.
Sweet and Spicy Squid
Ingredient (4 servings)
500 gm squid- cleaned and sliced
4 garlic- finely minced
1-2 red chili- minced
2 tsp soy sauce
2 tsp oyster sauce
1 1/2 tsp sugar
A pinch of salt
Few scallions shopped for garnishing
1 tbsp oil
- Heat oil in the pan over medium-high heat and sauté garlic and chili until fragrant.
- Add squid, soy sauce, oyster sauce, sugar, and a pinch of salt. Sauté for few minutes or until the squid is cooked.
- Check the seasoning and sprinkle over with some scallion. Serve hot with some rice.
I didn’t realize my son love squid until we found him stuff sweet and spicy squids in his mouth so quickly. The squid was so fresh and tender. The sweetness made the heat feel easy and pleasurable in the savoury sauce.
We made Tom Kha Khai (chicken curry with galangal), scallion omelet and sweet and spicy squid for lunch. From what I could see, the squid was the most popular.
