Yaseen has a day off so he would be responsible for his own lunch today. I am still fasting during the daylight hours which means lunch is all about him. Within my supervision, I let him select the ingredients and the dish to be made.
When pulled out thin rice noodle, a bowl, and a couple of chopstick over the kitchen counter, I knew exactly what he wanted.
In our home, noodle in sipping hot broth with meat and vegetable dunked in the sizzling, savoury lake is a common thing. It is really simple to make especially if you always have homemade chicken stock in the fridge like I do.
Noodle in clear broth is so warm and welcoming. The soft noodle soaked in flavourful stock with the juicy and melting meat balls floating on top is really good with kids. It was how my mom used to feed me, and now it is how I’ve cherish it with my son.
Noodle and Meatball Soup
Ingredient (2 servings)
3 cup chicken broth
1 celery stalk
200 gm minced chicken
2 cloves garlic- minced
2 tsp light soy sauce
White pepper and salt to taste
100 gm dried rice noodle
Few scallion- finely sliced
- Blanch rice noodle in boiling water until soft and transfer to the serving bowl.
- Bring the chicken broth to boil. Mix chicken, garlic, pepper, salt, and soy sauce and form the bite-size balls. Drop chicken balls in the broth and let it cook for a few minutes.
- Pour the broth and chicken ball over noodle. Sprinkle scallion over the top before serve.
It was difficult to get the shost of this hot noodle as Yaseen running behind me with the chopstick. He couldn’t wait to dig in, slurp on the smooth noodle, and bite those juicy meatballs. It was hot but he knew his way around a bowl of noodle. A quick moment later…. It was all gone, not even a drop of broth left behind.
