Sweet and Spicy Prawn Sandwich

My sister took Yaseen out for lunch one day in Thailand. They were kind of those “die hard” burger fans. When they came home, they wouldn’t stop bragging about the juiciest prawn burger they had in 7-11. Frankly, I didn’t know what they were talking about. 7-11 burger!? Though I wasn’t much of a burger fan and I’ve always preferred the conventional big fat ground meat over hot bread, I was ready to find out what the buzz was about.

Who knew we could find one of the best burgers ever in 7-11. I loved the smell of prawn burger, so fresh and vibrant. It was so much lighter, yet so juicy and meaty at the same time.

Today, Yaseen requested prawn burger for his lunch box. He had been thinking about those juicy bites the way I did. I chopped up some fresh prawn and made some patties to be grilled quickly over the pan. The smell of it was so irresistible. I also replaced the bun with bread and spicy it up with some Thai sweet chili paste. Did I mention this recipe is super quick, too? coz I had only 15 minutes to prepare his lunch box everyday.

Sweet and Spicy Prawn Sandwich

Ingredients: (4 sandwiches)

300 gm prawn- peeled, deveined and chopped

2 tbsp plain flour

2 tbsp beaten egg

1 tbsp chopped scallion

Salt and pepper to taste

8 slices bread

Mayonnaise

Thai sweet chili paste

Lettuce, onion, bell peppers for garnish

Oil for greasing

Preparation

  1. Combine prawn, salt, pepper, scallion,  flour and egg in the mixing bowl. Mix well and form 4 patties.
  2. Grill prawn patties over the medium heat, greased pan until golden brown.
  3. Serve prawn patties over slices of bread with some mayonnaise and Thai sweet chili paste. Add Lettuce, onion, bell peppers or any garnish you like. Serve and enjoy.

Every bite was such an explosion of flavours. Thai sweet chili paste wasn’t really too spicy, it’s more to sweet and exciting. The prawn was warm and extremely juicy. I know Yaseen must be enjoying his prawn sandwich right now at school. I know he will be requesting this often from now on.
