There were number of times I tried to avoid picking up packages of instant noodle from supermarket. To be honest, it’s one of the unhealthiest food we massively indulged. I have been trying very hard not to think about the steamy strings that felt so wonderful in the mouth, then finally I would have to go back to the supermarket again for a couple of packages. When it comes to instant noodle, I humbly accept my defeat.
My strategy with instant noodle is keeping off those instant tastemaker which usually very high in sodium and questionable amount of MSG. It’s better to cook the noodle in homemade vegetable broth which gives more comforting and fresh flavour.
Another way we loved to enjoyed instant noodle is tossing those soft ribbons in spicy salad dressing. A quick Thai spicy salad dressing made with fish sauce, lime, sugar and fresh chili gave the most vibrant flavour which is easily absorbed into cooked noodle. It’s so easy to whip everything up with some vegetable and protein to make it healthier and more delicious.
Thai Instant Noodle Salad
Ingredient (2 servings)
2 packages Instant noodle
1 lime- juiced
1 1/2 tbsp fish sauce
2 tsp sugar
1-2 fresh green/red chili- sliced
1/2 onion- sliced
1 tomato- sliced
1 cup sliced cabbage
Few celery leaves- sliced
1 cup cooked meat of your choice (we used pan roasted shrimp)
Some roasted peanut for garnishing
- Cook instant noodle in boiling water along with cabbage until the noodle is cooked and soft. Drain and keep aside in the mixing bowl.
- To make the dressing, combine lime juice, sugar, fish sauce and chili in the mixing bowl and stir until sugar is dissolved.
- Add onion, tomato, and cooked shrimp. Pour in the dressing and mix well. Check the seasoning and adjust it as you like. Throw in some roasted peanut and celery leaves at the end. Serve and enjoy.
Yaseen and I had this instant noodle salad for lunch. I was amazed how Yaseen adored the heat in this dish. It was spicy and flavourful. Every bite was so balanced and perfect. The peanut gave a little crunch, it was truly a bonus to this divine dish.
