Stir Fried Tofu with Bean Sprout and Oyster Mushroom

One of my favorite vegetarian dishes that can be prepared really quick is stir fried tofu. Tofu is very healthy, it’s a great source of protein, and we can basically whip it up with just anything we would normally do with meat.

I love the combination of firm tofu and bean sprout. It’s very subtle and comforting. I also add a little oyster mushroom to the dish for that earthy flavor and soft texture. I simply season the dish with soy sauce and white pepper. It takes less than 10 minutes to make.

Stir Fried Tofu with Bean Sprout and Oyster Mushroom

Ingredients: (2 serving)

200 gm firm tofu- sliced

2 cups bean sprout

200 gm oyster mushroom

2 tbsp light soy sauce

2 tsp ground white pepper

3 tbsp vegetable stock

2 tsp minced garlic

1 tbsp oil

Preparation:

1.   Heat oil in a pan over the medium-high heat and sauté garlic until fragrant.

2.   Add tofu and stir fry until slightly golden brown.

3.   Add bean sprout, mushroom, light soy sauce and ground white pepper.

4.   Keep stir frying for 1-2 minutes and add some vegetable stock when the dish is too dry. Check the seasoning and serve with some hot rice.

It’s a clean and simple dish. Very light and healthy. And it’s so good on top of hot rice.
