Awww, I got you my vegetarian friends all excited, didn’t I? Dirty rice is actually a meaty dish packed with pungent flavors chicken giblets and Cajun spice. It can be a comforting snack or wholesome meal. You think it’s not a thing for vegetarians an vegans, but oh yes, it’s very doable and oh so good.
Since I’ve been trying to eat clean and healthier, I made a healthier vegan version of dirty rice. I use tofu and vegan sausages instead of chicken giblets and meat sausages. I also use brown rice and homemade vegetable stock in this dish. It came out really light and fresh. So healthy and yummy.
Vegan Dirty Rice
Ingredients: (2 servings)
1 cup brown rice
1 1/2 cup vegetable stock
100 gm tofu- sliced
200 gm vegan sausage- sliced
1 green bell pepper- chopped
1 stalk celery chopped
1 onion- chopped
Salt to taste
1 tsp Cajun Spice
1 tbsp vegetable oil
1. Cook rice in vegetable stock until cooked and keep aside.
2. In a pan, heat oil in the medium heat and slightly brown tofu and sausages.
3. Add onion and sauté until translucent.
4. Add green bell pepper and fry until soften.
5. Add cooked rice and season with salt and Cajun spice. Fry further for 2 minutes. Remove from the heat and serve hot.
To tell you the truth, I really fall in love with the vegan version of dirty rice. It’s light, clean, simple and fresh. I love the aroma of Cajun spice. The rice is soft, packed with delicious flavor.
