Stir Fried Chicken with Baby Corn and Capsicum

I really love a simple stir fried anything on top of hot rice when I cook for just me. It took less than 20 minutes to make a whole meal. This is how I cook lunch. I stir fry something. While I cook rice which normally takes about 15 minutes, I just throw things I like in the wok, season with some soy sauce, oyster sauce and white pepper and bam! Lunch is done.

Today I stir fried some chicken with baby corn and capsicum. It’s very easy to make. You can substitute chicken with tofu and use any kind of veggies that you like. The method is the same. If you are a vegetarian, skip oyster sauce and try light soy sauce instead.

Stir Fried Chicken with Baby Corn and Capsicum

Preparation: (2 serving)

100 gm chicken- sliced

6-8 baby corns- sliced

1 whole capsicum- sliced

2 cloves garlic- minced

1/2 onion- sliced

1 tomato- sliced

1 tbsp soy sauce

1 tbsp oyster sauce

4 tbsp water

1/2 tsp ground white pepper

1 tbsp oil

Preparation:

Heat oil in the pan and sauté garlic until fragrant. Add chicken and stir fry for 2-3 minutes. Add onion, baby corn, capsicum, tomato, soy sauce and oyster sauce. Stir fry for 5 more minutes. Add water when the dish becomes to dry. Add ground white pepper and check the seasoning. Turn off the heat and serve it over hot rice.

This stir fried chicken with baby corn and capsicum is so comforting. The vegetables are still fresh and crunchy. It’s full of flavors, healthy and delicious. You can serve it with some hot rice or stir fried noodle.
