Calamari Tempura

Usually I don’t like to take the picture of the food we made for dinner to post in our blog, because the pictures came out very horrible in low light shooting. But this calamari tempura I cooked last night was so good, I had to take the pictures of it so I could share this recipe with you as soon as possible.

I just have to show you this. I mean look at it; it looks so good even in the night shot.

Do you know it’s so easy to make tempura batter? You don’t really need to buy tempura flour mixture because you can whip it up very quickly with only a few simple ingredients. I promise you this is going to be as good as what you get from the restaurant. You will get the super crispy rings of calamari and oh yes, the inside is going to be so tender and perfect.

So how do I make my tempura batter? I mix a cup of flour, 1/2 cup of corn flour, a tad of baking powder, a little salt and white pepper to taste, 3 ice cubes, and 1/2 cup of chilled water. That’s it. It’s so easy. Now all you need to do is dip some calamari rings in the batter and deep fry them.

Calamari Tempura

Ingredients: (2 Servings)

500 gm calamari- cleaned, washed and sliced into rings.

1 cup flour

1/2 cup corn flour

1/4 tsp baking powder

1/2 tsp salt

1/2 tsp ground white pepper

3 ice cubes

1/2 cup chilled water

Oil for deep frying

Preparation:

1. In a medium bowl, mix flour, corn flour, baking powder, salt, white pepper, ice cubes and chilled water. Use a pair of chopsticks to stir the mixture only a few times. Do not over-mix the batter. We don’t want smooth batter, but lots of lumps in it.

2. Heat oil in the deep frying pan over the medium heat. The right temperature to deep fry tempura is about 350 degree F.

3. Dip the calamari rings in the batter, and slowly drop them into hot oil. Deep fry for a few minutes or until golden brown. Remove the calamari rings from the oil and serve hot.

These calamari tempuras are super crispy on the outside and so juicy and soft on the inside. I served them with black sweet and sour sauce made with sugar, vinegar, salt and green chili. Have a little salad on the side. The freshness of salad gives a nice balance to deep fried food.
