I don’t really like beetroots; I have to tell you that. But I know they’s very healthy vegetable. So sometimes, I bought them and I have exactly 2 recipes to deal with them. First, the one I’m going to show you, it’s what I’ve learned in India. It’s a simple stir-fried beetroots with onion and curry leaves. This is not my favorite version. But it’s very easy to make, and it goes well as a side dish in Indian meal. My favorite beetroot recipe is stir-fried beetroot with eggs. Sounds interesting? But you will have to find out about it later.
Today, I’m going to show you the Indian version of beetroot recipe. You just have to dice the beetroots up and cook it in a little oil with some onion and curry leaves. Salt is the only seasoning used in this recipe. Sounds easy right? Let’s cook then.
Stir Fried Beetroot With Onion and Curry Leaves
Ingredients: (2 servings)
250 gm beetroots- peeled and diced
1/2 onion- sliced
5 curry leaves
1 green chili- sliced
1/2 tsp salt
1 tbsp oil
1. Heat oil in the pan over the medium heat. When the oil is hot, add onion and curry leaves, and sauté onion the onion is translucent.
2. Add diced beetroot and salt. Stir fry the beetroot for 5-7 minutes or until it is cooked and slightly soft. Serve as a side dish.
You can use it on rice or eat it with flatbread. It’s sweet and has a nice texture. Though I’m not a fan of beetroot, this recipe makes me enjoy this healthy veggie very much.
