I love stir frying. People who know me know dealing with wok is my forte. I might as well declare myself a stir frying queen. Well, at home at least, I am just that. Stir frying is spontaneous, and that’s my style of cooking. I have no patient. Now you know why I love street food.
So here is one of my favorite stir fried crazes. Believe it or not, there are only 5 ingredients in it, and the whole thing take less than 7 minutes to cook. Garlic chives are great for stir frying. They go with any kind of proteins, for vegetarian tofu or mushrooms. These gorgeous green leaves are cooked easily. Then welt under the heat and release amazing earthy flavor into the dish. I love garlic chives with seafood, with fish especially. Together they create such a subtle flavor. Humble and balanced. Oyster sauce and white pepper are the only seasonings I used in this dish. Stir Fried Fish with Chives
Ingredients: (2 servings)
200 gm fish fillets (use firm-flesh fish, I used sea bass)- sliced
250 gm garlic chives – cut into 2 inches long
2 cloves garlic- minced
1 tbsp oyster sauce
1/4 tsp ground white pepper
A tbsp oil for stir frying
1. Heat oil in the pan over medium- high heat and saute garlic until aromatic.
2. Add fish and stir fry for 2 minutes.
3. Add garlic chives, oyster sauce and about 2 tbsp of water.
4. Stir fry further until the fish is cooked and the chives become soft.
5. Add white pepper and check the seasoning. Serve hot with cooked rice.
Tip: You have to be very gentle while stir frying fish. The meat is very delicate so you should carefully turn and mix it.
Stir Fried Fish with Garlic Chives is great with rice. I love mixing that glossy sauce on rice. Fish is super soft and sweet. Garlic chives gives a nice chewy texture in contrast to it.
