The weather in Pune has been really cold lately. I love chill air. It makes me want to fill the whole house with warmth, buttery baking smell and comfort food. And when you think about comfort food, what pops right in your mind right away? For me, it’s soup. Hot, yummy, fresh home-made soup.
My favorite soup of all time has to be noodle soup with chunky meat, but from time to time, I make vegetarian soup loaded with healthy goodness like this Green Pea and Leek Soup. It’s so easy to make, and I love how everything turns into gorgeous green smoothness in the end.
Pea and Leek Soup
Ingredients (2 servings)
1 large leek, trimmed and thinly sliced
2 cup fresh pea
2 cups vegetable stock
1 tbsp butter
Salt and freshly ground black pepper
Parmesan or cream for garnishing
1. Melt the butter in a saucepan. Add the leek and cook over a low heat for a few minutes or until the leek is soft. Add stock, cover and cook further for 15 minutes.
2. Add the pea and cook further for a few minutes on low heat. Do not let the soup boil.
3. Let the mixture cool slightly, then purée until smooth. Season with salt and pepper. Reheat in the pan.
4. Garnish with Parmesan or cream and serve warm.
