I bought a dozen of instant noodle every week. It’s been like this since I started to buy groceries by myself. Instant noodle is blood-like to me. It’s like how coffee is for some people, instant noodle is that addictive to me. Sometimes I try to think about why I like it so much. I never really find the actual answer of why I can enjoy the same food over and over again— is it because of my laziness or the simple flavor that I always find comfort in? The truth is I don’t mind living on it every day. I did when I was a teenager. I’m not picky. Something like this makes me absolutely satisfied.
Most of the times, I plainly cooked noodle as per package instruction, and in a few minutes, my meal is ready. But when I want things to be a little different, I put a little work on it. Like this dish, Stir Fried Instant Noodle with Chicken and Vegetables, I give it another 5 minutes or so, to add chicken, veggies and to think about the different seasonings. At the end, it’s still a lazy dish… a comforting delicious lazy dish.
Stir Fried Instant Noodle with Chicken and String Beans
1 package instant noodle
1 cup chicken stock
50 gm chicken sliced
3-4 string beans- sliced
½ onion- sliced
2 cloves garlic- roughly bruised
¼ cup sliced cabbages
¼ cup sliced carrots
½ tbsp oyster sauce
1 tbsp yellow bean paste
1 tsp sugar
1 tsp vinegar
½ tsp ground white pepper
Chili flakes for garnishing
Celery leaves for garnishing (you can also use spring onion)
1 tbsp oil
Heat oil in the pan over the medium-hight heat, and when the oil is hot, add garlic and sauté until aromatic.
Add chicken and stir fried for a minute or so.
Add onion and all the vegetables, and then season with oyster sauce, yellow bean paste, sugar and vinegar.
Add chicken stock and bring to boil.
Add instant noodle and cook until the noodle is cooked and absorbed most of the liquid.
Add ground white pepper, check the seasoning, and garnish with some chili flakes and celery leaves.
