Ah, I feel like I am the busiest person in the world. I have to wake up at 6 in the morning to cook and get my little guy ready. By the time, Sadik and Yaseen leave home for office and school, I have to get ready to work on my small business. Between my work and cooking, I spend every second I have to work on my latest novel as much as I could. I like to be busy. It’s very productive. By the way, sorry about the quality of the picture. I made this in the evening and couldn’t get a good shot of the cake.
Today I treat myself with a few slices of carrot cake. I deserve it. I never made carrot cake before so I just go blind on the recipe. It came out moist and creamy. So perfect.
Easy Carrot Cake
100 gm Butter- room temperature
½ cup brown sugar
1 cup grated carrot
1 ½ cup flour
¼ cup milk
1 tsp baking powder
1 tsp vanilla essence
Cream butter and sugar until slightly fluffy. Add eggs, milk and vanilla. Whisk until smooth.
Add carrot and stir well.
Sift in flour and baking powder. Mix until combined.
Bake the cake in the greased cake pan in a preheated oven at 180 degree C for 40 minutes.
Serve hot with your favorite beverage.
