Garlic and Pepper Chicken with Rice

The only thing I miss the most when I travel is cooking. I love eating food at local restaurants a lot, but after a while, I crave the comfort of home-cooked meal. A lot of you guys have been telling me to share more recipes, and while I’ve been cooking a lot, 3 meals a day except on the weekends actually, I was unable to keep up with the loads of work.

I’ve been trying to finish a novel in NaNoWriMo, novel writing marathon, but the goal seems really far-fetched right now because I have to edit the travel videos, maintain my blog, clean the messy house, and help my sister set up her business at the same time. I haven’t given up this novel writing though because I love the taste of success, and I will try my best anyway.

Every minute is very valuable to me right now so when I cook, I try to make it quick so I can catch up with other things. One-dish-meals work amazing for me right now. I love a big bowl of noodle that has everything in it, fried rice loaded with sausages and veggies, and a plate of rice with stir fried meat and vegetable on the side.

Today I’m making Garlic and Pepper Chicken with Rice. This was one of my go-to dishes when I was studied in Bangkok. The dish takes roughly 5 minutes to make when you already have rice. It’s delicious and satisfying. I love a big drizzle of Sriracha sauce on top of it with cool slices of cucumber on the side.

Garlic and Pepper Chicken with Rice

Ingredients:

200 gm chicken- thinly sliced

10 cloves garlic- chopped

1 tsp ground white pepper

1 tbsp oyster sauce

1 tbsp light soy sauce

2 tsp fish sauce

2 tsp sugar

2 tbsp vegetable oil

Cucumber slices and Sriracha sauce to serve on the side.

Direction:

In a medium bowl, combine chicken, light soy sauce, oyster sauce, fish sauce, ground white pepper and sugar. Mix well and keep aside. You can marinate it for 15 to 30 minutes for more flavor, but I mostly just cook it right away.

Heat oil in the pan over medium-high heat. Add garlic and sauté until aromatic.

Add the chicken and stir for 3-5 minutes or until the chicken is cooked well.

Serve Garlic and Pepper Chicken with rice. Add sliced cucumber and Sriracha sauce on the side.
