Corn Salsa with Prawn Chips

I found out that there are prawn chips available in India a year ago, and since then, I have been buying them every now and then. The prawn chips here are very similar to what we have in Thailand, but it’s slightly inconvenient that there’s no a ready-to-eat version. These chips are raw so I have to fry them before eating.

And let’s be honest here, it’s not that healthy because the chips soak up quite a lot of oil. I always find half of the oil disappears from the pan after making a bowl of prawn chips. Anyway, I can’t really help it because I just love eating deep fried food so much.

Usually, I make some dips to go with hot prawn chips. I love the fresh zingy flavor of anything in the season that can be chopped and mixed and served immediately. This Corn Salsa is one of my favorite side-kick snacks. It’s can be done swiftly in a food processor.

Corn Salsa with Prawn Chips

Ingredients: (4 servings)

½ cup dried prawn chips

2 fresh sweet corn

1 onion- quartered

1 tomato- quartered and deseeded

1 capsicum- roughly sliced

1 lime- juiced

¾ tsp salt or to taste

A handful fresh mint leaves- chopped

2 cup of oil for frying

Direction:

Bring a pot of water to boil. When the water is boiling, add corn cobs and cook for 1 minute. Remove from the water and slice the kernels off of the cobs.

In a food processor, add onion, tomato and capsicum. Chop them into tiny pieces.

Transfer the chopped onion-tomato and capsicum mixture into a large bowl.

Add corn kernels, salt, lime juice and mint. Stir well and adjust the flavor as per your liking.

Now heat oil in a frying pan and fry the prawn chips.

Serve prawn chips with corn salsa and enjoy.
