Grilled Salmon with Kale

Usually, our weekends, when we don’t go trekking, are basically filled with errands, lunches at the restaurants, and randomness around the town. The days are usually messy, and we can’t stick to the schedule. After grocery shopping, we go for lunch which often ends up quite late in the afternoon. By the time, we get back home, my husband always feels so tired that he falls as asleep on the couch right away.

We have to come to terms with the fact that eating out is not quite healthy. And while I’m not very strict with my diet, my husband is very conscious about this stuff. Sadik loves healthy food so whenever we have to eat out, he feels guilty and miserable afterward. Bad food makes you feel bloated and tired. I want my family to be healthy and happy so we cut down eating out and concentrate on making gorgeous, delicious and healthy meals at home.

I love cooking fish because not only they can be cooked really fast, but they’re really light and nutritious as well. I make this simple marinade using grated ginger, garlic, lemon zest, honey, shoyu, sweet rice wine vinegar and some sesame oil. The marinade is quite mild so it allows the flavor of my salmon to shine. I serve this delicious grilled salmon on a bed of crunchy stir-fried kale with a little salt and pepper.

Grilled Salmon with Kale Recipe


400 gm salmon

1 tbsp shoyu

2 tsp sweet rice wine vinegar

2 tsp honey

½ tsp sesame  oil

1 tsp grated ginger

1 tsp grated garlic

½ tsp lemon zest

½ + ½ tbsp vegetable oil

Salt and Pepper to taste

400 gm kale

2 cloves garlic- minced


In a large bowl, combine shoyu, sweet rice wine vinegar, sesame oil, honey, grated ginger, grated garlic and lemon zest. Mix well, and marinate the salmon for 10- 15 minutes.

Preheat the griddle over medium heat and lightly grease it with ½ tbsp oil.

Add salmon and cook it for 2 minutes on each side, depending on how thick your fillets are. Do not overcook it. The salmon should be moist and lovely on the inside. Remove from the heat immediately when it’s perfect.

In another pan, add ½ tbsp oil, and sauté garlic over high heat until aromatic.

Add kale, salt, and pepper, and stir fry for just one minute. The kale should be soft and still have some crunch on it.

Serve Grilled Salmon over the bed of kale, and enjoy!
