10 Minutes Minced Meat Noodle

Our summer vacation has been a little low key. There’s not much happening because Sadik has been busy with work. But at the end of the month, we might drive down to Kerala to relish the magic of the rainfall.

On the weekend, when we have a chance to drive out of town, I enjoy looking at the bright blue sky. It reminds me of those days when I was a kid lying under a big mango tree and watching the clouds slowly dissipated and changed their shapes and stories. I don’t want this summer to just pass by, and in fact, I don’t want any single minute to just pass by, so we just put on some sunscreen and run wild under the summer sun.

My schedule has become quite relaxed because I don’t have to deal with sending my 8 years old to school in the morning, but at the same time, my routine is erratic right now because he’s around all the time.

Yesterday, I made one of our regular dishes, Stir Fried Noodle with Minced Meat. It’s quick and it’s perfect for us. We often keep minced meat at home because it can be cooked super fast. A plateful of greasy fat noodle is my kind of comfort food. If red meat is too heavy for you, you can try it with chicken, seafood or even tofu.

10 Minutes Minced Meat Noodle


200 gm uncooked rice noodle

250 gm minced meat

4 cloves garlic

2 tbsp yellow bean paste

2 tbsp light soy sauce

1 tbsp sugar

1 tbsp rice wine vinegar

1/2 tsp ground white pepper

2 tbsp vegetable oil

Chopped green onion for garnishing

Bean sprouts to serve on the side


Cook rice noodle in boiling water until soft, rinse in chilled water, drain well and keep aside.

In a large pan, add oil and heat it up over high heat. When the oil is hot, add garlic and sauté until aromatic.

Add minced meat and give it a quick stir.

Add yellow bean paste, light soy sauce, sugar and rice wine vinegar. Stir and cook for 3-5 minutes or until the meat is just cooked.

Add noodle and toss well.

Add some ground white pepper just before turning off the heat.

Serve Minced Meat Noodle with some bean sprouts and chopped green onions.

Stir fried noodle should be served straight from the pan. The hotter, the better. If it gets cold, it’s not going to be the best. I also add some chili flakes to my noodle because I love spicy food. Yaseen usually adds some Sriracha Sauce on his.
